The Creamiest Keto Butter Chicken You Will Try!

Aromatic, Tasty and Easy. There is a plethora of superlatives and adjectives which I could select to describe this phenomenal dish. But I’ll go with those 3 as I think they sum it up simply and elegantly.

If you’re looking for a simple Keto dish to impress someone or if you are feeling experimental and want to try your hand and cooking this authentic Indian dish than I cannot recommend Butter Chicken more!

It’s creamy, buttery and so splendidly smooth. Serve with Cauliflower Rice as they go hand in hand together.

Ingredients

-100ml of Greek-Style Full-Fat Yoghurt

-1 Tablespoon Lemon Juice

-2 Tablespoons Garam Masala

-1 Tablespoon of Tumeric

-1 Tablespoon Cumin Seeds

-1 Tablespoon Ground Coriander

-Salt & Pepper to Taste

-600g of Boneless Chicken Breast – diced into bitesize pieces

-60g of Salted Butter

-1 Medium White Onion – peeled and roughly diced

-5 cloves of garlic – peeled and roughly chopped

-2 Tablespoons of Freshly chopped Ginger

400g of Chopped Tomatoes

-500ml of Heavy Cream

-100ml of Chicken Stock

Method

  1. Place the Chicken in a bowl after you’ve diced it and add the yogurt, lemon juice, garam masala, turmeric, cumin seeds, ground coriander and a pinch of salt and pepper. Coat evenly and place in fridge for a minimum of 20 minutes. Leave overnight if possible as this will further enhance flavours
  2. Melt 10g of butter with a pinch of salt and once all is melted add the onion, garlic, ginger and cook slowly until all is softened.
  3. Add in the tomatoes and season with salt and pepper. Cook until the tomatoes are soft – about 10 minutes.
  4. Add the Heavy Cream and Chicken Stock and use a stick blender to combine all ingredients so the sauce is smooth.
  5. Add the marinated chicken and cover. Leaving to simmer for a minimum of 1 hour stirring often.
  6. Serve with Cauliflower Rice, garnish with fresh Coriander and Enjoy J
